Motivational Monday's (11/18/19) Recipe: Deliciously simple crock pot

Happy Monday ladies and gents! 

I hope everyone had a lovely weekend! With the Fall season in full swing I want to share a deliciously simple crock pot recipe I made last night! This chicken chili made me feel so warm and cozy. Its filling, very nutrient dense, & makes that "food prep" I preach for success SO so easy! If you do not have a crockpot or slow cooker... GO GET ONE! I promise you it will make your life so much easier. 

I know a lot of us struggle with cooking in bulk and trying to divide it out (either to make it last over the week OR to add it to myfitnesspal for accuracy's sake) so I am sharing an example of how I did this yesterday.
Adding a "Recipe" to MyFitnessPal: 
  1. Go to "more" than "foods and recipes" then "add recipe" and "manually input". Named my recipe- made it 10 servings (you can adjust this per your family/specific needs of course) then typed out the ingredients.
  2. Of course none of the ingredients came up right when I copied the recipe into MFP, so i clicked "search for alternative" on each of the ingredients that was similar to mine OR scanned the barcodes. 
Crockpot Chicken Chili: 
  • 1 (15.5 oz) can black beans (no salt added/reduced sodium/fresh)
  • 1 (15.5 oz) can kidney beans (no salt added/reduced sodium/fresh)
  • 1 (8 oz) can tomato sauce (no added sugars) 
  • 7 oz frozen corn kernels (or fresh corn if you can) 
  • 1 (10 oz) can diced tomatoes w/chilies (again, no added sugars) 
  • 1 packet taco seasoning or homemade (there are so many yummy taco seasonings out there that are not loaded with sodium)
  • 1 tbsp cumin
  • 1 tbsp chili powder
  • 2lb boneless skinless chicken breasts (can use thighs as a substitute just make sure to enter those instead of breasts into MFP when creating the recipe, also the macros will change from what I have attached but that is OK) 
  • 4 oz chopped green chili peppers 
*****Combine all ingredients except chicken in crock pot. Stir. Add in chicken. Cook on high for 6 hours. Shred up chicken. 

Once I cooked the chili, I poured it into a new bowl that was on a zero-ed out scale. Total weight came up to 2470 grams. I divided the total weight by servings = 2470/10 = 247g per serving. Then I weighed out my dinner of 1 serving of chili equal to 247g.
